Many people like to spell Zoe with the diaresis on the 'o' (like Zöe). This is wrong, because the diaresis (2-dot-thingie) actually makes it so you pronounce the "e" as a separate letter from the "o". Without the diaresis, Zoe would be pronounced Zo (like Jo). The correct way is Zoë.
